Vegetable Biryani
Fragrant layered rice with vegetables and warm whole spices — a festive favourite.

Ingredients
- 2 cups basmati rice, soaked
- 2 cups mixed vegetables
- 1 onion, thinly sliced
- 1/2 cup curd
- 2 tbsp ghee
- 1.5 tsp GRIND PURE Shahi Garam Masala
- 1 tsp GRIND PURE Sabzi Masala
- 1/2 tsp GRIND PURE Turmeric Powder
- Whole spices (bay leaf, cloves)
- Salt to taste
Method

Parboil the soaked basmati rice with the whole spices; drain.

Fry the sliced onion until golden and crisp.

Cook the vegetables with curd and all the GRIND PURE spices.

Layer the parboiled rice over the cooked vegetables.

Top with the fried onion and a drizzle of ghee.

Cover and cook on low heat (dum) for 15 minutes.

Gently fluff and serve hot with raita.
